Inner balance and integration.
Vinum Mixtum is Vinea Castel’s Signature Wine. It is not a cuvée: Solaris, Johanniter, Riesling, Souvignier Gris and Muscaris are harvested and fermented together with other sustainable varieties, creating deep integration and a distinctive identity.
Style: Inner balance and integration
Origin: Joint harvest and fermentation
Character: Complex, integrated, self-possessed
Ageing: Restrained, focused on integration and length
Food pairing: Versatile with structured, complex cuisine
Vinum Mixtum is the essential synthesis of our work. It unites varieties and parcels not through subsequent blending, but through a shared origin.
Harvest takes place as late as possible, when all varieties have reached optimal ripeness. Co-fermentation creates a wine that does not appear as the sum of separate parts, but as a complete whole.
It shows diversity with restraint and balance, without seeming restless. It has depth without heaviness. It is self-contained, precise and unmistakably Vinea Castel.
Vinum Mixtum is versatile and well suited to structured, complex cuisine: multilayered dishes, fine textures, mature components, herbs, vegetables, fish, white meats or reduced sauces.
Its strength lies in integration: it combines freshness, structure and aromatic depth in a calm, reliable accompaniment.
